
At the slightest sign of cool weather, we end up making so much soup. Broccoli and Cheese soup. Potato Soup. Beef Vegetable Soup. And this new traditional Sausage Soup. That MIL likes to add kale. And I HATE kale. But this soup is amazing. I also don’t mind the baby kale as much. Especially this batch because it was from OUR garden.
MIL has a special Youtuber that she loves to follow and we get a ton of our recipes from, but the woman didn’t put this recipe in the notes of her video for some reason. So MIL had me write everything down from her notes. It’s not the most eloquent, but you pretty much get the point of the soup. As long as we know what goes into it, we can basically make it.
Sausage Soup Recipe
(MIL calls it her Sausage Kale Soup and I suppose this means it’s a Soup Du Jour that’s become a house specialty.)
- 1 lb Breakfast Sausage
- 1 whole Onion, diced
- 8 ounces Cream Cheese
- 1 cup Heavy Cream
- 1 quart Stock
- 1 bag of Kale (16 ounces/2 cups)
- 2 cans Petite Cut Tomatoes
SEASONINGS – 4 Tablespoons if FRESH or 3 teaspoons when DRIED
- Parsley
- Oregano
- Basil
- Thyme
- Garlic Powder
- Pepper
- Red Pepper Flakes
In a heavy bottom kettle, fry sausage and onions.
Add stock.
Add spices, kale.
Add tomatoes.
Boil and simmer for 15 minutes.
Add heavy cream and cream cheese. Once it’s all be incorporated, serve and enjoy!
This one goes well with bread. I also poured some over my leftover rice today! So yummy and delicious. If you ignore the bread and rice, it’s totally low carb and healthy for you. I’m so bad at eating healthy. It’s hard to find food that’s yummy and good for you.
