I scare the crap out of myself this morning. (My meter clock is really bad off right now, I know it says 8:25P but it was sometime in the middle of the night/early morning.) Surprisingly, I didn’t even eat keto/low carb yesterday. I had half a bowl of homemade fried rice. I was super nauseous for the rest of the day so I didn’t eat anything else. Then I woke up with those numbers and had to woof down two granola bars. And surprisingly it only went up in the 90’s afterward.
My MIL had an appointment this morning that requires me to drive her to it. They inject her eyes with medicine… so definitely no driving for her. And due to the pain from the injections, she usually sleeps after the appointment. So I got to make lunch and dinner today!
I made low-carb wrap pizzas for my SO for lunch. Which is really easy and convenient and my numbers barely go up when I eat one of these. La Banderita has amaziballs low-carb tortillas. The pizza sauce has the most carbs out of everything. It’s very hard to find a low-carb tomato-based sauce, but Classico is what we like. I went extra today and cut some thin slices of provolone to go along with the mozzarella cheese. And pepperonis. Because we love the meat.
I also made a chicken and broccoli casserole for dinner that I think turned out pretty good as well.
Keto Chicken and Broccoli Casserole
- Chicken (I used 1-2 Quart Jar of Chicken Breast meat. You could be lazy and debone a store Rotisserie chicken for this. )
- 2 Cups Shredded Cheese of Your Choice (I used a Fiesta Blend and some Parmesean)
- 1 Block of Cream Cheese (8 Ounces), Room Temperature
- 1/4 Cup of Mayonnaise
- Salt, Pepper, and Garlic, to taste
- 1 Onion, diced
- 2 Tablespoons Butter
- Broccoli (I used 4 small heads)
Preheat oven to 375°F. I started out by sauteeing my diced onions with butter in a pan until they become translucent. While those were getting happy, I cooked the broccoli in the microwave for 2 minutes with just a bit of water. Since it was fresh broccoli, you want to do this so it gets soft enough. Frozen probably won’t need it, BUT you want to make sure you account for the excess water that will leak from the broccoli as it cooks.
Put the mayonnaise, cream cheese, cooked onions, cheese, and seasonings all into a bowl and stir up until smooth. Then add the chicken and broccoli. Toss together until all of it is coasted in the creamy cheesy goodness. Spray a casserole dish with non-stick cooking spray then put the mixture in. I made sure the spread it evenly then sprinkle the top with more cheese. I cooked it for 40 minutes covered with aluminum foil. In the end, I took off the foil and broiled it until the cheese was brown.
Ever since my SO had COVID back in 2020, he has had a hard time smelling or tasting food. But today was a good nose day. He could actually smell the casserole and he said the onions hit his taste buds in a good way So we’ll take that as a win. My inlaws also ate it, so that’s an extra thumbs up.
I experimented with a low-carb gluten-free mug cake recipe from Delish. My SO has a birthday this week so I was trying to prepare myself. I didn’t have any chocolate chips so I just made the recipe without. I doubled the recipe and actually just cooked it in the oven since it was already preheated. Overall, it turned out soft and moist, but a little too crumbly. That was the almond meal, but I think I’ll modify it for my SO’s birthday. It needs vanilla extract. And probably an extra egg to give it a more dense flavor. I might also attempt to beat the egg whites until they’re stiff before folding the other ingredients in.
I only ate a tiny slice because the almond flour/meal items always sit like a brick on my stomach. It was really good though. I haven’t needed any insulin today either! So that’s definitely a plus! Thanks for stopping in to read today, guys.
