International No Diet Day

I still miss my Mango bird. She loved to steal a bite of whatever you ate.

My SO won’t be breaking his diet today, because he’s been doing so well with Keto. 20 pounds down! I’m so proud of him. I’ll probably try to make something for him today. Something that actually fits his diet. I’m not doing great on my diet, sadly. But it’s International No Diet Day! So let’s see what National Today has to say:

For myself, I’ve made some very easy and not really homemade cookies! It’s stupidly easy. Just take a box of cake mix! I used a butter cake mix. Use two eggs, half a cup of vegetable oil, and a splash of vanilla extract (I also added a splash of almond extract). You can mix this up and add whatever mix-ins that you want to make some delicious cookies.

For my cookies, I chopped a bar of white chocolate up into little chunks. Used a small bag of craisins. Then about a cup of pecans. I actually tossed these in just a tiny bit of the cake mix beforehand to coat it all. I tend to do that when I’m making cakes because it helps prevent the ingredients from sinking to the bottom of the batter. I have NO idea if that’s helpful in cookies. It was just a force of habit.

Bake at 350ºF for 4-10 minutes on a parchment paper-lined baking sheet.

I tried the cup trick where you put a cup over the warm cookies and swirl it a bit to make the cookies rounder, but it did NOT work for me. *sigh* Not sure what I did wrong. But I’ve got some lovely treats to enjoy. Hopefully, everyone is doing well today and enjoying their Friday! See you guys tomorrow.
