
On Superbowl Sunday, I made some eggs for my SIL because she’s currently recovering from major surgery. This one is keto-friendly and was super easy!
Egg “Muffins” or “Pucks”










- Eggs, lots and lots of eggs, about one for each cupcake hole
- Ham, Bacon, Chicken, or whatever meat substitute you like with eggs
- Vegetables! I did onions, mushrooms, and bell peppers
- Cheese, shredded
This one is super simple. Roast and cook everything you want to go into your eggs. They won’t cook for very long in the oven so you want the pieces of these easy “omelets” to be precooked to the point you’d like them. Even if you were to do bacon, I’d at least get it to the point where it was close to done.
I mixed my eggs beforehand. Don’t add milk/cream to the eggs. You don’t need it. Add all the ingredients you want into the cupcake tins AFTER you’ve sprayed them with cooking spray. They’ll get really full, but trust me, the egg will fit in between everything. I used too many eggs when I started this. I realized after that I’d only need one egg for each cupcake hole after I was done. I used the rest of the egg and ingredients to make omelets for my family.










Preheat your oven to 350°F before you start preparing all the add-ins. Then cook for 20 minutes until the eggs are set and no longer oozing. Since SIL is on bed rest, I sent a dozen of these over. These can go in the freezer and be defrosted for breakfast as needed.
