Put the lime in the Avocado and you smash it all up… A magical spell for tasty yummy stuff.
We had about six ripe avocados ready to use recently. Mother-in-Law really loves buying them and apparently Father-in-Law and Step Daughter love eating them. So I whipped up some Guacamole using ingredients we had around the house.
- Ripe Avocado – 3 or more
- Garlic Paste or Finely Minced Garlic
- 1/2 diced onion, red for some heat or Vidalia for some sweetness
- A bundle of cilantro, remove the stems and shred
- 2 Roma Tomatoes, diced small
- Lime Juice
Cut your avocado in half and remove the pit. You can run your knife over the avocado while it’s still in the shell and use a spoon to scoop it out easily. I splash it with some lime juice now to keep it from browning. I add a bit of salt them mash it until smooth. Then you add the other ingredients to the avocado. Make sure everything is blended together well and then put it in containers. Air is the enemy for Guacamole!
Store it with some plastic wrap pressed to the surface, no air bubbles or it will turn brown! I made SO much guacamole. I ate some with chips for dinner. Father-in-Law likes to put it on his salads. Step daughter enjoys it on her wraps.
My SO doesn’t like guacamole or avocado, but he tasted some and said it was decent. It’s a texture thing for him. I’ve been bearing the brunt of eating the Avocado besides the guacamole made for my family. I had one ripe avocado the other day and made myself a smoothie. It was delicious! Just some almond milk, vanilla protein powder, stevia, and the avocado. I froze the avocado with some lime juice the day before and that gave it a creamy, frozen treat texture. I might add banana next time, but otherwise it was good.
